Black jelly is made from black heather. This is a herbaceous, branched, spreading on the ground like mint. Leaves are light green, egg-shaped, toothed edges. Flowers grow into dense clusters at the ends of branches. Flowering plants in late autumn and early winter. Black heather originated from South China but was imported into us for a long time. In Vietnam trees have been grown in some places; Currently grown in Lang Son and Cao Bang, most in three communes of Chi Lang, Kim Dong and Tan Tien in Trang Dinh district, Lang Son province.

Black rhinestones only propagated by asexual path, the seed source is mainly by the stem of the previous crop. Moist soil-loving plants are sandy loam soils with deep, rock-free depths. Do not plant black agar on heavy soil or weathered limestone. People often grow up on fields that have been left fallow for 2-3 years. Planting near the house for good care conditions, productivity can be twice as high as in the hills.
Black jelly is a short-term tree that local people often say to each other is a poverty reduction tree.

Farming: 12.5 tons / ha x 10,000 VND / kg = 125,000,000 VND / ha
In 2005 income from black heather was 10.3 billion. (not including breeding stage)
4 – Processing.
If cared and fertilized well, one year can be harvested twice (in June and October 11). Harvesting when plants appear flower buds in tops are the highest yield. It is necessary to cut the root, stems and leaves to spread evenly, light sunshine a day and then pile again 1-2 days to bring it to the next exposure. About 2-3 days of drying is dry. If the field does not fertilize to develop naturally, only once a year can be collected in October – November. Usually 10 kg of fresh jelly leaves are 1 kg dry.
If you want to process Jelly food, you have to wash dry foliage of sandy soil and put it into a cooking pot, let it cool down, squeeze the residue, pour water into a clean cloth bag, squeeze and collect water, then pour rice powder into stir all on the fire. When the solution thickens, the north goes into the pot, and the cold is eaten. When processing according to the formula: 0.3 kg of branches, dry jelly leaves + 2 glutinous rice cows will cook 6-7 kg of edible jelly. Using less flour, the jelly will be darker and tastier.
Since the 1980s, black jelly has become a commodity. Many families have collected about 10-20 million VND / year thanks to planting and selling black jelly.
